Fig. 01 — The finished dish.
Method · stovetop
  1. 01
In a kadai: Add a little ghee. Roast the rava nicely until a pleasant aroma comes. Keep aside.
  2. 02
In another kadai: Heat ghee. Add mustard seeds, urad dal, chana dal, peanuts, and hing. Add chopped onions, tomatoes, green chillies, carrot, curry leaves, and optional ginger. Sauté well until soft.
  3. 03
For 2 cups rava: Add about 4–5 cups water. Once it starts boiling: Add salt, turmeric powder, and Vangi Bath powder (homemade or MTR). Let it boil well.
  4. 04
Slowly add the roasted rava while stirring continuously. Mix well without lumps. Cover with a lid. Add 1 spoon ghee on top. Sprinkle coriander leaves. Cook on low flame.
  5. 05
After switching off: Let it rest covered for about 20–25 minutes. When opened, the Kara Bath will be soft, flavorful, and aromatic.
A note from Lavanya

A little sugar is secretly added in some hotel versions to balance tomato acidity and chilli heat. The aroma of roasted rava and ghee together is considered the ‘heart’ of a good Kara Bath.
